Ellen's Jambalaya
(adapted from the Frugal Gourmet)
Sauté (in oil or Pam):
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 6 spring onions, chopped
Place the above in a large pot with:
- 16 oz can of tomatoes (crushed with your hands)
- 16 oz can of chicken broth
Simmer one hour.
Sauté:
(Optional: Deglaze sausage pan with a bit of the broth, and add to large pot) Set the
sausage aside.
Add to pot:
- 2 tablespoons Worcestershire sauce
- 1 1/2 tablespoons parsley
- 1 teaspoon Tabasco sauce
- 1 1/2 teaspoons thyme leaves
- salt and pepper to taste
Simmer 20 minutes.
Sauté:
Add to pot:
- 1 cup converted rice
- the chicken
- the sausage
Simmer 25 minutes (until rice is tender).
